Mushroom & Blue Cheese Linguine Recipe

A sprinkle of chopped parsley or basil can provide a pop of freshness that complements the earthy mushrooms and tangy blue cheese. It's like a little herbaceous party happening right on your plate.

Serves: 4

Ingredients:
250g dried linguine
450g mushrooms of your choice, thinly sliced
1 medium shallot, finely chopped
salt, freshly ground black pepper, crushed red pepper flakes
250ml heavy cream
100g gorgonzola
handful of fresh parsley, chopped  


Instructions:
1. Cook pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve about ½ cup of pasta water for use later (you may not use it all), then drain the pasta.

2. Meanwhile, heat olive oil in a large pan and sauté the shallot over medium-low heat, stirring often, until softened, about 5 minutes. Stir in garlic and cook for an additional minute.

3. To the pan, add mushrooms and cook, stirring every so often, until softened and they have released some of their moisture, about 5 to 8 minutes. Season with salt, black pepper and a pinch of crushed red pepper flakes.

4. To the pan, add the blue cheese and heavy cream, stirring to combine (it's okay if there are still chunks of blue cheese, I like that).

5. Add the cooked pasta and ¼ cup of the reserved pasta water to pan and stir to incorporate sauce with pasta (add more pasta water if you like).

6. Serve with more blue cheese and fresh parsley. Enjoy!
