Honey Broccoli Noodles with Cashews Recipe

I am a very happy cook and making the most out of valuable free time in the kitchen is very rewarding.  It's delightful trying a new recipe, simple or otherwise and oh-so rewarding when it turns out successful; not just the flavours of the meal but also the quality of its presentation and do you know what makes me even happier?

I mislaid my digital camera many, many moons ago, so the good ol' mobile phone has been my saviour to take images.  My new mobile phone has a camera that has specs that are three times better than my digital camera, so I am finally able to show my food in its full glory.  The mission now is to maybe cook/make previous recipes and update the pictures. Okay, might be getting too carried away now but let's see...

The balance of the savoury broccoli and the touch of sweetness from the honey here creates a unique flavour profile that appeals to both kids and adults alike and the dried chilli pepper gives it a nice oomph! Whether you're a fan of Asian cuisine or simply looking for a quick and healthy meal, this will surely satisfy your cravings.
It's time to play food stylist and make this look as good as it tasted. Grab a plate or bowl and carefully arrange a generous serving of the noodles and broccoli mixture. Maybe sprinkle some extra cashew nuts on top for a touch of elegance. Don't be afraid to get creative and make your masterpiece shine!
Prep Time: 20 min
Cook Time: 15-20 mins

300g Chinese noodles

1 tbsp vegetable oil

250g broccoli, trimmed and cut into florets including the stems

4 garlic cloves, crushed

60g cashews (chopped, if desired)

½ tsp dried chilli flakes

4 tbsp honey

4 tbsp soy sauce

1 lime, quartered

1. Cook the Chinese noodles in salted boiling water for about 5 minutes, or according to the instructions on the packet, until tender, stirring regularly to separate the strands. Drain in a sieve and rinse in cold water. Drain well.
2. Meanwhile, heat the oil in a large frying pan or wok over a medium heat and stir-fry the broccoli for 5–6 minutes or until just softened. Then add the garlic and cashews and continue to fry for 1 minute more.
3. Add the chilli flakes, honey and soy sauce. Bring to a simmer and cook for about 1 minute, or until the sauce reduces and thickens a little.
4. Add the well-drained noodles and toss everything together. Divide between bowls and squeeze over a little lime juice and a pinch more chilli (if desired), to serve.
