Honey Broccoli Noodles with Cashews Recipe

I am a very happy cook and making the most out of valuable free time in the kitchen is very rewarding.  It's delightful trying a new recipe, simple or otherwise and oh-so rewarding when it turns out successful; not just the flavours of the meal but also the quality of its presentation and do you know what makes me even happier?


I mislaid my digital camera many, many moons ago, so the good ol' mobile phone has been my saviour to take images.  My new mobile phone has a camera that has specs that are three times better than my digital camera, so I am finally able to show my food in its full glory.  The mission now is to maybe cook/make previous recipes and update the pictures. Okay, might be getting too carried away now but let's see...

Ingredients:

300g Chinese noodles

1 tbsp vegetable oil

250g broccoli, trimmed and cut into florets including the stems

4 garlic cloves, crushed

60g cashews (chopped, if desired)

½ tsp dried chilli flakes

4 tbsp honey

4 tbsp soy sauce

1 lime, quartered

Instructions
1. Cook the Chinese noodles in salted boiling water for about 5 minutes, or according to the instructions on the packet, until tender, stirring regularly to separate the strands. Drain in a sieve and rinse in cold water. Drain well. 
 
2. Meanwhile, heat the oil in a large frying pan or wok over a medium heat and stir-fry the broccoli for 5–6 minutes or until just softened. Then add the garlic and cashews and continue to fry for 1 minute more.
 
3. Add the chilli flakes, honey and soy sauce. Bring to a simmer and cook for about 1 minute, or until the sauce reduces and thickens a little.  
 
4. Add the well-drained noodles and toss everything together. Divide between bowls and squeeze over a little lime juice and a pinch more chilli (if desired), to serve.
