Cold Beetroot & Orange Soup Recipe

Move over Romeo and Juliet, there’s a new love story in town! Beetroot and orange soup may seem like an odd couple, but the culinary world wouldn't be the same without their unexpected romance. Today, I unravelled the tale of this dynamic duo and unveiled the hilarious concoction that is beetroot and orange soup!


Imagine the chaos that ensued when beetroot and orange first met! It was like a scene from a romantic comedy with splashes of vibrant colours everywhere. Beetroot blushed a deep purple when it laid eyes on the radiant orange, and they found themselves mixing hues faster than a palette in an artist's studio. They knew they were meant to be together, creating a soup that would make all other soups green with envy!

Beetroot can be a beautifully coloured accompaniment that goes perfectly with many other flavours, orange in this instance.  Who knew that a chilled soup could bring such harmony? Enjoy it and vitaminise yourselves with pleasure.
 
Prep Time: 10 mins
Cook Time: 30 mins
Serves: 4

Ingredients:
1 tbsp olive oil
1 large onion, chopped
1 tsp sugar
600g pre-cooked beetroot, diced
800ml vegetable stock
1 orange, zest, and juice
salt and pepper, to taste
fresh cream or yogurt to serve, if desired

Instructions:
1. Heat olive oil in a large pot and sauté the chopped onion for about a minute. Simply add all the ingredients to the pot, apart from the orange juice and zest. 

2. When it starts to bubble, reduce the heat and leave to simmer for 15 minutes.

3. Stir in the orange juice and zest, then remove the pot from the heat.  Place the mixture in a blender or food processor and blend until smooth.  Season with salt, and pepper, 

4. Place in fridge for 2-3 hours to chill.  Serve with a drizzle of fresh cream, and garnish with parsley.
