Fettuccine with Mushrooms & Red Chilli Recipe

This recipe is very economical and because it's so quick to make, it will get you out of trouble when you're in a hurry and as it doesn't have many ingredients, it is perfect for children as they don't usually like very elaborate dishes.
 


In the time it takes to heat the water and cook the spaghetti while preparing the rest of the ingredients, you will have this dish made.  It really doesn't take long to prepare, and it's delicious.

Prep Time: 10-15 minutes
Cook Time: 15 minutes
Serves: 2
 
Ingredients:
1 clove garlic, crushed
½ red chilli, deseeded and finely chopped (or a pinch of dried chilli flakes)
250g chestnut mushroom, thickly sliced
1 tsp salt
150g fettuccine
2 tbsp chopped flat-leaf parsley
¼ tsp fresh-ground black pepper
 

Instructions:
1. In a medium frying pan, heat the olive oil over a moderately low heat. Add the garlic and chilli and cook, stirring until the garlic fragrant.

2. Add the sliced mushrooms and the salt and cook until the mushrooms exude liquid and the mushrooms begin to brown.  This will take about 5 minutes. 

3. In a large pot of boiling, salted water, cook the spaghetti. Drain and toss with the mushroom mixture, the parsley, and the pepper.
