Linguine with Garlic, Oil & Chilli Recipe

A quality pasta, fragrant garlic, extra-virgin olive oil and fresh chilli pepper and only a few more key ingredients and you'll have one of the most famous and appreciated first courses of Italian cuisine served on the table.

By following these simple guidelines you can be certain to have an extremely versatile and satisfactory lunch or dinner made very, very quickly. Simple as it seems, it will satisfy!

Serves: 4

Ingredients:
400g dried linguine or spaghetti
125 ml olive oil
2 garlic cloves, finely chopped
2 small red chillies, deseeded and chopped
2 tbsp chopped parsley
salt and black pepper
grated Parmesan

Instructions:
1. Cook the pasta in a large sauce pan of salted water as instructed on the packet instructions until al dente.

2. Heat the oil in a saucepan over a low heat. Add the garlic and a pinch of salt and cook, stirring constantly until the garlic is golden. Stir in the red chillies.

3. Drain the spaghetti and add to the saucepan with the warm garlic, oil and chillies. Add plenty of pepper and the parsley. Toss to combine and serve immediately with some grated Parmesan.
