Following on from the starter I made today (see the recipe for Creamy Asparagus Soup), this is in keeping with what I mentioned about time keeping, so, I had starter and a main dish prepared in under an hour today.
By following these simple guidelines you can be certain to have an extremely versatile and satisfactory lunch or dinner made very, very quickly. Simple as it seems, it will satisfy!
Prep Time: 5 mins
Cook Time: 8 mins
400 g dried spaghetti
125 ml olive oil
2 garlic cloves, finely chopped
2 small red chillies, deseeded and chopped
2 tbsp chopped parsley
salt and black pepper
1. Cook the spaghetti in a large sauce pan of salted water as instructed on the packet instructions until al dente.
2. Heat the oil in a saucepan over a low heat. Add the garlic and a pinch of salt and cook, stirring constantly until the garlic is golden. Stir in the red chillies.
3. Drain the spaghetti and add to the saucepan with the warm garlic, oil and chillies. Add plenty of pepper and the parsley. Toss to combine and serve immediately with some grated Parmesan.
