Sweet and Surprising: Your Guide to the Perfect Dessert Risotto

The beauty of a dessert risotto lies in its unexpectedness. It takes a familiar comfort food and flips it on its head, creating a truly memorable culinary experience. The creamy, starchy texture of the arborio rice that makes risotto so satisfying in savoury dishes? It’s the perfect vehicle for rich, molten chocolate. It’s like the most luxurious rice pudding you’ve ever encountered, but with a sophisticated edge.

Think of it as a blank canvas, ready to be adorned with whatever sweet dreams you can muster. But for this particular adventure, we’re sticking to a classic, albeit slightly less common, combination: the deep, sophisticated embrace of dark chocolate. It’s a bold choice, I know, but trust me, the slight bitterness of good quality dark chocolate perfectly balances the sweetness and the inherent richness of the dish. It's an Italian dessert with a modern, daring twist.

4. Finally, add the hazelnuts, sultanas and grated chocolate and mix quickly.  Serve decorated with a little grated chocolate.  Try not to overmix the chocolate as the marbled effect looks good.
