Ingredients:
450g fresh or frozen peas
350d dried spaghetti
75g softened butter
4tbsp fresh parsley, chopped
4tbsp fresh basil, chopped
2tbsp fresh chives, chopped
1 garlic clove, peeled and crushed
salt and freshly ground black pepper
freshly grated Parmesan cheese, to serve
Instructions:
1. Steam the fresh peas in a steamer, or in a covered saucepan with very little water, for 5-8 minutes. If you are using frozen peas, cook as diected on the packet.
2. Put the butter in a bowl and mix in the herbs and garlic.
3. Heat a large pan of water and add plenty of salt. When it boils then add the spaghetti. Cookuntil al-dente.
4. Drain the spaghetti well and return to the hot pan. Add the peas and herb butter and toss together. Serve at once with black pepper and Parmesan cheese.
