Mixed Berries & Spinach Salad with Honey Dressing Recipe

Well, it's already March and I am still in a jolly mood, so I thought I'd put some of the leftover frozen cranberries from Christmas to good use.  My wife loves salads, any time of the year, simple or otherwise and I'm always looking for new options to combine ingredients and have more variety of salads.


It's an extra step to toast some walnuts and scatter them on top; it only takes a few minutes but it is well worth the effort.  You'll love the crispy bits around the edges and the aroma is kind of magical.

Ingredients:

For the salad:
3 large handfuls of fresh spinach
50g frozen cranberries (frozen or dried)
75g blueberries (frozen or fresh)
100g feta cheese
50g walnuts (toasted, if desired)


For the dressing:
1 tbsp olive oil
1 tbsp water
2 tbsp honey
2 tbsp balsamic vinegar

Instructions:
1. For the salad: Toss all ingredients together in large bowl.

2. For the dressing: Mix all ingredients together well in small bowl.

3. Pour dressing over salad and stir to combine and then serve.
