Scrambled Egg White with Spinach, Chorizo & Goat Cheese Recipe

This was an interesting start to a Maxterchef Tuesday. The combination of flavors from the spicy chorizo & tangy goat cheese creates a wonderful dish that has set to become a brunch favorite!

1 tsp olive oil 
35g baby spinach
2 tbsp crumbled goat cheese or feta cheese
100g chopped chorizo
4 large egg whites 
¼ teaspoon tabasco sauce
pinch of salt
pinch of freshly ground black pepper
2tsp olive oil

1. Heat 1 teaspoon of olive oil in a frying pan.

  1. 2.  Add the spinach and cook just until wilted, about a minute. Drain, press out the liquid and chop coarsely. Place the spinach in a small bowl.  Stir in the cheese and chorizo.

  2. 3. Blend egg whites, hot sauce, salt, and pepper briskly with a fork in a medium bowl.

  1. 4.Heat two teaspoons of olive oil in an egg pan over medium-high heat until hot. Tilt the pan to swirl oil over surface.

  2. 5. Pour in the egg mixture followed by the spinach, chorizo and cheese mixture. Reduce heat to medium and cover. Continue to cook until almost set, and the bottom is golden, about 5 to 6 minutes and serve.
