Prawn & Chorizo with Rice Recipe

To maintain that motivation to eat well, it is important to find habits that are sustainable over time. For me, an essential factor in the sustainability of a habit that is easy and does not involve wear and tear. That's why I like to cook nutritious, super delicious recipes that are easy and don't take forever in the kitchen. To meet all the requirements of nutritious, delicious and easy, I share with you today a recipe that took me only half an hour to prepare and cook.


Eating healthily has a very powerful healing power for two reasons. The first is that food as close to its natural state nourishes our cells at a very deep level. It fills our tissues with antioxidant and anti-inflammatory agents that prepare us to deal with all the oxidative stress the body receives from pollution, pesticides, strong emotions, and in general what surrounds us. 


The second is that beyond the power of food as such, there is the intention that eating healthy puts us to vibrate at a higher frequency if the intention comes from love, that is, if it comes from having a healthy relationship with what we put in our mouth. If the focus of healthy eating comes from self-love, our bodies receive this as healing information.  That information becomes a frequency and the body becomes attuned to it. Remember that reality is constructed in language, thought and emotions.

Ingredients:
1tbsp olive oil
1 small onion, chopped
110g chorizo sausage, chopped
1tsp turmeric
300g long grain rice
1 litre fish stock
200g frozen peas
250g cooked prawns, deveined

Instructions:
1. Heat the oil in a deep frying pan, then soften the chopped onion for 5 minutes without browning.  Add the chorizo and fry until it releases its oils. Stir in the turmeric and rice until coated with the oils and then pour in the stock.  Bring to a boil and then simmer for 15 minutes, stirring occasionally. 

2. Tip in the peas and cook for five minutes, then stir in the cooked prawns to heat through for a final 1-2 minutes or until the rice is cooked.  Check for seasoning and serve immediately.
