Korean Glazed Chicken Drumsticks Recipe

Do you remember those days when you came home exhausted and didn't feel like cooking dinner and picked up the phone to order a junk food delivery? Do you think that fast food is a thing of the past? Well, you're wrong, because we can still prepare a really delicious, homemade and healthy meal with minimum effort, like the chicken drumsticks I'm suggesting today.


And the sauce that goes with these drumsticks! This sauce is so delicious, I can see you licking your plate. Go on, I'm not looking...

Serves: 4

Ingredients
8 drumsticks
salad, to serve

For the marinade:
11⁄2 tbsp soy sauce
1 shallot, roughly chopped
1 tbsp honey
1 medium piece of ginger, finely grated
4 cloves of garlic, finely grated
1 tsp dried chilli flakes
11⁄2 tbsp mirin

Instructions
1. Put all of the marinade ingredients into a mixing bowl with a good grinding of fresh pepper and whisk everything together.  

2. Score the drumsticks with a sharp knife and toss them in the marinade.  Cover and chill for as long as possible, overnight would be great.

Heat the oven to 160C and lay the drumsticks on a shallow roasting tray.  Spoon over any excess marinade from the bowl.  Roast the chicken for 40 minutes, then baste with the sticky juices in the tin.  Turn up the oven temperature to 220C and continue to cook the chicken for 20 more minutes or until caramelised.  

3. Use tongs to lift the chicken onto a platter or individual plates and scatter over some spring onions, if you like.  Serve with a simple salad.
