Chickpea Salad with Tomato & Onion Recipe

Summer is a tad far away, but no matter the weather or temperature, we all appreciate a salad now and again, right?  Nothing better than a light and invigorating food and surprisingly better still is the fact that simple salads can be scrumptious and nutritious!  So, these are the words I use to portray the chickpea salad.  Light, reviving, delectable and that is not all, it is super practical.  There's no reason not to make it.

Simple ingredients, that when mixed together become magnificent.  If you want, you can also use other vegetables and spices like courgette, corn, carrots, peas, oregano, basil, endless possibilities really.  But the simple combination of ingredients used here are already very tasty so it doesn't really need anything else.

As I remarked previously, it is not difficult to make.  Simply mix all of the ingredients in a bowl, put it in the fridge for a short time so that the chickpeas soak up the flavours well, and that is it!

Ingredients
425g chickpeas
1⁄2 small onion, chopped
1 clove garlic, minced
1 medium sized tomato, chopped
1 handful of fresh parsley, chopped
3 tbsp extra virgin olive oil
1 tbsp lemon juice
salt and pepper to taste
 
Instructions
1. In a large bowl, combine the chickpeas, onion, garlic, tomato, parsley, olive oil, lemon juice and salt and pepper to taste. Chill for 2 hours before serving. Taste and adjust seasoningif need be, and serve.
