Cod & Chorizo Stew Recipe

Recipes with cod always triumph at home. Dishes that range from a simple cod with ratatouille, a more elaborate cod lasagna, the classic cod fritters, or those homemade cod croquettes.


Today, I prepared cod in one of its simplest preparations;  stewed in a wonderful tomato sauce.  As with all traditional recipes, there are many ways to prepare this dish. I recommend this one, which is always successful.

Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 4

Ingredients:
1 tbsp olive oil
1 large onion, finely chopped
200g diced chorizo
400g can of chopped tomatoes
4 cod fillets
400g butter beans, drained
1 handful of fresh parsley, roughly chopped

Instructions:
1. Heat the oil in a deep frying pan and add the onion.  Cook over medium heat for 5 mins until starting to soften.

2. Add the chorizo and cook for another few mins to release the oil. Coat the onion in the chorizo oil, then tip in the tomatoes.  Fill the can with water and tip that in too. Season and bring to a boil.

3. Season the cod fillets and lay into the pan. Reduce the heat and gently simmer for about 7 minutes. Gently mix in the butter beans and cook for 1-2 mins more until hot.  Scatter with fresh parsley and serve.
