Watermelon & Feta Salad with Mint Recipe

The watermelon, cheese and mint summer salad is a cold and very refreshing dish, ideal for summer. This salad contains contrasting ingredients and pleasant to the palate. Watermelon has more than 90% water, which makes this salad diuretic. It is a fruit that allows healthy hydration, being low in calories and rich in vitamins and minerals. In the summer watermelon is available at quite accessible prices and you can buy the type that does not have seeds. The ones of this type are a little more expensive, but they save the work of extracting them to prepare the salad.

Serves 4

Ingredients
1/2 large seedless watermelon, chilled 
1/2 cup extra virgin olive oil 
3 limes, juiced
1⁄2 tsp salt
150g watercress leaves
small handful chopped mint
120 g  diced feta cheese

1. Cut the rind from the watermelon, then dice. Place chunks in a colander to drain.

2. For the dressing, in a small bowl, whisk together the olive oil, fresh lime juice, salt, and black pepper.

3. Place watermelon in a large salad bowl. Coat with the dressing and season with pepper and chopped mint. Serve on top of the watercress leaves.
