Blueberry Spinach Salad with Honey Balsamic Dressing

I's one extra step to toast the walnuts.  It only takes a few minutes and is sooo worth the effort.  You will love the crispy bits around the edges and it adds an extra bit of flavor and depth to the walnuts.  Plus, the aroma is kind of magical and the walnuts will stay crispy even though you layer on all of the balsamic dressing to your blueberry spinach salad!

Serves: 4

For the salad:
3 large handfulls fresh spinach
50g dried cranberries
75g blueberries (fresh or frozen)
100g feta cheese
50g walnuts (toasted, if preferred)

For the dressing:
1 tbsp olive oil
1 tbsp water
2 tbsp honey
2 tbsp balsamic vinegar

1. For the salad: Toss all ingredients togather in large bowl.

2. For the dressing: Mix all ingredients together well in small bowl.

3. Pour dressing over salad and stir to combine and then serve.
