Penne Pasta with Peanut Butter Sauce Recipe

If you like peanut butter then you will love this.  Spaghetti, rigatoni, macaroni, pasta shells - anything will work well with this unusual sauce.

Cook Time: 10-15 minutes
Serves: 4

350g dried penne pasta
2 tbsp olive oil
1 large onion, peeled and finely chopped
2 cloves garlic, peeled and crushed
1 tsp grated lemon ring
4 tbsp smooth peanut butter
250ml milk
freshly ground black pepper
4 tbsp freshly chopped mixed herbs such as parsley, basil or tarragon

1. Cook pasta in plenty of salted boiling water as directed by package instructions.

2. Meanwhile, gently fry the onion, garlic and lemon rind in the the olive oil in a large non-stick pan.

3. Gradually stir in the peanut butter and milk and bring to boil, adding a little more milk if sauce becomes too thick.

4. Drain the penne pasta and return to pan with sauce.  Toss together well and season with pepper.  Serve sprinkled with freshly chopped herbs.
