Creamy Asparagus Soup

It´s already March. Time flies, even when you´re not having fun.  Due to other commitments I have simply not had the time to express my love for the kitchen as much as I would like. One good note is that asparagus is back in season. This is a very simple soup for anybody who works on a tight schedule.



Prep Time: 30 mins
Cook Time: 30 mins

Ingredients:
2 tbsp olive oil
1 onion, finely chopped
400g asparagus, finely chopped
500ml vegetable stock
salt and freshly ground black pepper
4 tbsp double cream

Instructions:
1. First, wash the asparagus. Don´t soak it, simply holding the stalks upsode down under cold water .
Hold bothe ends of the spear and bend.  The tough base should snap off.

2. Heat olive oil in a saucepan over a medium heat. Add the onion and fry until softened.

3. Add the asparagus and cook for 2 minutes.

4. Add the vegetable stock and bring to the boil. Season with salt and freshly ground black pepper.
Reduce the heat and simmer for 10 minutes.

5. Add the double cream and blend with an electric hand blender until smooth.

6. Serve garnished with cooked asparagus tips if desired.
